Ramadan Recipes from Shimu’s Kitchen



Ramadan or Ramzan is the pious month of the Islamic Calendar, in which the Muslims fast for a month from dawn to dusk. It is not just about fasting, it is also about restraining anger, doing good deeds, being charitable through ‘zakat’ and ‘fitre’. It exercises personal discipline and develops one to be a good person during and after Ramzan.

It is said that dates and juices are good sources of sugar. The body’s immediate need at time of Iftari (post fast meal at dusk) is to get energy. Dates serve as an easy energy source and juices help to maintain water and mineral balance in the body. I am presenting two such recipes of a date milk sherbet and a date pudding. Both the sherbet and pudding can be taken at iftari or sehri (pre dawn meal).


Date Pudding

1 cup dates chopped
1 cup condensed milk
1 cup full cream milk
3 eggs
5 Tbsp sugar
3 Tbsp butter
1/2 cup bread crumbs
1 Tsp vanilla essence

To Garnish
2 date syrup or chocolate syrup

Beat sugar and butter

Beat in the eggs one by one followed by condensed milk,bread crumbs and vanilla essence

Add the chopped dates
Mix well

Pour in greased pan or pudding mould
Cover with aluminum foil to steam for 30-40 minutes

Serve mould pudding garnished with date or chocolate syrup.


Date Sherbet

500 ml full fat milk
100 ml chocolate
1 tsp rose water
100gm dates
sugar as required (1Tbsp preferable)

Remove the seeds of the dates,crush little bit and finely chop and keep aside.

Boil milk in a vessel on medium flame. Add the finely chopped dates and rose water.

When the milk cools down, mix with hand blender and strain to remove skin from dates.

Place the strained milk in a vessel and crumble the chocolate pieces,along with sugar as required (1tbsp) into the milk so that it melts.

When the milk cools down stir or use hand blender.

Garnish with grated chocolate. Serve hot or cold.
